Chipotle-Charred Vegetable Salad

So this salad is beautiful, there’s absolutely no doubt about that.  I also have been making a version of something like this literally every single day for lunch for the past… oh about two weeks.  Of course the version that I make for my lunches isn’t quite as artistic and well-styled as the one in these pictures, but the taste is so good that I don’t think I could ever get sick of it.  It is a perfect summer party salad, packed full of fresh, juicy, charred vegetables and topped with a homemade chipotle dressing that has a little kick to it.

I made a big batch of this salad to serve at a party last weekend and every last bite was gone by the end of the night.  Even the non-vegetarians couldn’t get enough!

Rainbow Chard + Toasted Walnut Pasta

I recently entered some of my work in a local food photography contest.  In fact, the submission deadline was yesterday!  I wanted to enter some photos that I could take outside with our beautiful green grass and trees in the background.  When I was shopping around the grocery store for some inspiration, I saw a bunch of rainbow chard that was so beautiful it made me weak and I said to it, “You BELONG on camera”.

This recipe is pretty simple and easy to make, but it looks and tastes pretty damn sophisticated! Sauteed chard with ginger + garlic, toasted walnuts, some fresh grated parmesan cheese.  Boom.  Just add a (big) glass of wine and you’re good to go.

Avocado + Sauteed Onion Quesadilla

Quesadillas are one of my favorite quick weekend lunches to make because they’re a departure from my typical week-day salad and there are so many gourmet combinations you can make using a tortilla and melted cheese.  This weekend I had a perfectly ripe avocado and half of a yellow onion that looked like they would go perfectly together.  I also only had 20 minutes to make lunch and run out the door… of course while still allowing 5 minutes to snap some good photos.

Zucchini-Baked Skillet Eggs

I have a lot of friends that like eggs.   I also have a lot of friends who don’t like to cook.  I would say that a vast majority of those non-cookers avoid it because they either (a) don’t have a ton of free time and (b) hate doing dishes.  Well guess what, my loves?  I was inspired by you all last weekend and make this in honor of you egg-obsessed, dishes-hating, busy busy people.

Thai Broccoli + Red Pepper Salad

If you cringe at the idea of eating broccoli, read this post.  If you absolutely love broccoli and would eat it in raw handfuls, read this post.   You see, broccoli is one of those foods that people feel strongly about in one polar direction or another – you either love it or you hate it.  What I am trying to do is spread the word that there is no need to hate it… EVER.  There are so many ways to prepare broccoli and make it taste like the best thing on earth.

This salad is just one exquisite example of how to do it… so I’m sorry, but there are no excuses anymore.

Roasted Butternut Squash + Cranberry Salad

I am not ready to stop cooking with butternut squash yet.  No no no, not doing it.  While squash is typically a fall and winter ingredient, I don’t really care because (a) I like how it tastes and (b) this one from the grocery store tasted perfectly perfect.

I love this salad because it is simple but there are so many different flavors going on.  Sweet butternut squash, tart cranberries, earthy greens and the light crisp of toasted pecans.  I highly recommend investing the effort to make the homemade Apple Cider Vinaigrette dressing, too!  It is a great addition to an already perfect plate of goodness.

Whole Wheat Pasta Primavera

Alright, this is starting to get a bit ridiculous.  It is 2/3 of the way through April and we’re currently getting snow in Minnesota!  This morning as I was digging my car out from where I parked it on the street last night, I thought about all of the unfortunate things happening in the world right now and put things into perspective.  If the biggest obstacle in my day is a few inches of snow in April, things are going pretty well :)

Rather than complain, I am going to just get over the whole thing and cook like it is Spring weather outside anyway. Maybe the more I cook with Spring ingredients, the more likely it is that the weather outside will start behaving a bit?  #wishfulthinking

Garlic + Parsley Roasted Asparagus

With the Masters currently underway, we’ve been seeing a whole lot of green on tv and in the news lately. Combine that with the fact that April marks the beginning of asparagus peak season and you can understand why I’ve made this recipe three times in the past week already.

This is the best roasted asparagus I have even had, by far.  It is easy and quick, and a perfect accompaniment for a nice piece of fresh fish.

German-Style Potato Salad

The idea of potato salad always evokes images of summer gatherings for me.  BBQ’s, potlucks, picnics; it is a staple dish at most gatherings that involve the sun and good company.

In order for potato salad to be “german-style” it pretty much just needs to replace the mayonnaise with olive oil and vinegar in some way.  From there, you can get a bit creative.  So, as I sit inside on this snowy night longing for the summer, I find a little warmth in writing about a recipe I came up with that reminds me of it.

Lemony Roasted Vegetables + Pumpkin Seeds

Well, it’s officially above freezing temperatures here in Minnesota which makes me think of Spring, which makes me think of green things, which makes me want to eat lots of green vegetables!  This recipe is just a bunch of green vegetables thrown together, roasted in  lemon juice and then tossed with a lemony-mustard dressing.  Sprinkling some salty pumpkin seeds on the top adds a most perfect crunch!

Stir Fried Cabbage w/ Raisins + Pine Nuts

Ok, this might be another one of those recipes that I made completely from an idea that I thought sounded good in my own head but quite possibly doesn’t appeal to any. one. else. I actually googled around for a bit after I made this recipe to see if there was anything similar to it on the internet and there wasn’t… which I actually really like!

Cabbage is one of those foods that we ignore too much.  My creation dresses it up in an Asian themed stir fry sauce and will make you love this often-neglected member of the cruciferous family!

Chimichurri Avocado Toasts

Oh myyyyy look at what we have here.  Have you ever had the pleasure of eating Chimichurri?  It’s this amazingly fresh and versatile green sauce made from herbs, citrus and vinegar traditionally served with grilled meat in Argentina.  Ever since first learning how to make it, I eat it over lots of stuff.  My favorite is to put it on grilled white fish in the summer but today we’re going animal free and instead enjoying it over the flesh of ripe avocados on top of warm, crusty bread.

Consider it an Argentine Avocado bruschetta of sorts.  Yeah, I like that.

Sesame Green Beans + Caramelized Onions

One of my best friends’ family owns an authentic Chinese/Vietnamese restaurant right across from where we went to business school.  I became known so quickly for how much I loved their green beans that it was somewhat of a salutation for me.  Rather than being greeted with “hello” I was always welcomed with “we have lots of nice fresh green beans ready for you!” or something similar.  That is customer service at its finest if you ask me!
