Vanilla-Almond Breakfast Polenta
Here is a fun alternative to your morning oatmeal if I’ve ever seen one!
Simply put, polenta is essentially just yellow or white maize (cornmeal) that has been ground to a desired consistency. From there, you cook it by simmering in a water-based liquid, milk or stock (depending on what you’re serving it with) and from there, it can be eaten as a porridge or baked, fried or grilled. I love polenta because of how versatile it is, as it tastes great in both sweet or savory dishes.
