Coconut + Peanut Curry Tofu

Before you start moaning with dread, hear me out.  I know that homemade curry is one of those undertakings that can seem a bit complicated, but I promise that this recipe is not.  It’s so simple that I actually made this one morning to bring for lunch that day!

Warning: the photos get a bit steamy.  Seriously though, the food was really hot when I was taking pictures of it because I didn’t have time to wait for it to cool down!

Sesame Green Beans + Caramelized Onions

One of my best friends’ family owns an authentic Chinese/Vietnamese restaurant right across from where we went to business school.  I became known so quickly for how much I loved their green beans that it was somewhat of a salutation for me.  Rather than being greeted with “hello” I was always welcomed with “we have lots of nice fresh green beans ready for you!” or something similar.  That is customer service at its finest if you ask me!

All Hands on Deck

My family has this great tradition where we have dinner together once a week.  This usually involves cooking together on a Sunday afternoon while we have football on in the background.  The concept might sound simple, but it’s the strategy we use to stay in touch amidst all of the ever-increasing responsibilities of our adult lives. Cooking with my family is always the highlight of my week.
