Cherry + Almond Chicken Salad

The inspiration for me to make this salad came about in kind of a goofy way.  The other day I was cooking some chicken on the stove and there was a bag of cherry-almond granola on my kitchen counter.  I had just bought some of these plump, dried cherries at the grocery store and I’ve been waiting for something to inspire me to use them.  Well, this is what happened!

This recipe can be enjoyed in so many ways; as it is, in a sandwich, on top of some crispy romaine.  I used plain greek yogurt and a ton of great flavoring to make the “dressing”… it’s a common trick to replace mayonnaise in case you haven’t discovered it yet! I would highly recommend getting familiar with all of the amazing things you can do with greek yogurt.

Roasted Spiced Nectarines

I wrote this recipe for a few reasons.

1) There was a time when we had an absolute surplus of stone fruit at our house and I needed to figure out something to do about it.

2) I am obsessed with freshly ground rosemary in my eggs, so I thought I would try experimenting with it elsewhere.

3) This recipe is perfect because it is simple, healthy and can be eaten as a quick snack or served as a beautiful dessert!
