Ginger + Curry Sweet Potato Fries

So we are well into NHL and NBA playoff season, which means that pretty much every night there is an opportunity to get together with friends and watch a great hockey or basketball game (or both).  It also means that there are plenty of opportunities to cook together and enjoy a meal in between moments of shouting at the tv.

My favorite hockey team, the Minnesota Wild, just so happens to be in the playoffs right now so I cooked dinner for my friends while we watched game 2.  In coming up with the menu, I wanted to cook a variety of finger-foods that appealed to men and women, were packed full of flavor and that felt reminiscent of something that you could get at a sports arena.  One of the items that I made was my interpretation of the classic and always favorite Sweet Potato Fries.  I was so happy to serve this dish to people that I love!

Orange-Soy Shrimp with Red Quinoa

So we’ve all heard of quinoa, right?  You know, the light, fluffy grain that’s high in protein and goes well with pretty much every single food group?  We are taking quinoa as you know it to the next level here. 

This is a perfect example of why it is so cool to have a mom who works at an organic food co-op; she’s always introducing me to awesome food products that I otherwise might have not discovered, like red quinoa.

Thai Basil + Chicken Stir Fry

Ohhhhh the colors in this dish make me weak in the knees.  I had an extra chicken breast (that was already cooked!) so this rainbow of flavor and vitamins only took me 15 minutes to make… and about 30 seconds to inhale.

I would highly recommend trying to find thai basil for this recipe because it has subtle hints of mint and licorice to it, but regular basil will do just fine.
