Banana Frozen Yogurt

Are you like me and you accidentally let bananas get way too ripe, way too often?  Next time they’re getting a little brown, cut them up and freeze ‘em.  And then you’ll be able to make this.

In honor of Pi Day (my wonderful roommate’s most fav holiday), I am sharing this delightfully frozen dessert trick for her because I said I would.  It’s not pie, but she’s going to like it and that makes me happy.

Back story:  

The other day my Ms. Malllory was telling me about how she wanted to eat more bananas but that she couldn’t stand the texture of them.  This concept came to mind right away because who doesn’t like the texture of ice cream, right?  I was shocked the first time I tried making banana frozen yogurt but it’s true, pulsing bananas in a food processor with a bit of liquid turns them into a frozen, creamy delight that you’re gonna swear came from a cow’s utters.

So in honor of this incredible young woman and the commitment I made to help her enjoy bananas in alternate forms, I’m thinking this might make some believers out of other people as well.

If you don’t have a food processor, dear lord get one.

What will you need?

2-3 cups frozen, sliced bananas

1/2 – 3/4 cup soy milk (depending on how many bananas and the consistency that you want)

1 tsp vanilla extract

Cinnamon to sprinkle on the top

Additional toppings: Honey, nuts, sugar, fruit preserves, nut butter, chocolate chips, coconut

How do you make it?

In a food processor, combine your frozen bananas, soy milk (or milk of your choice) and vanilla extract.

Blend until creamy.  I swear you will not believe what happens!

Sprinkle some fun stuff on top and feel bad for anyone who paid for Dairy Queen tonight.

    • I know!! It is such a good trick. I remember when I first discovered it a few years ago (by reading blogs, of course) I was shocked at how amazing it turns out! Do you add anything to it or just eat it straight up?

      • I’m a cinnamon addict, so of course I add that haha. But occasionally I’ll melt a little peanut or almond butter on top and sprinkle it with dark chocolate… it’s heaven :)
