Skillet Scrambled Eggs with Spinach + Parmesan
Lately I’ve been trying to come up with some good meal ideas that you can make entirely in one skillet while also using minimal dishes and utensils to prepare the ingredients. This saves a lot of time, energy and is good for the environment because you’re not wasting a ton of water on washing dishes!
Recipes like this also help work toward one of the goals that I set out to accomplish with this site which is to show that cooking good food doesn’t need to be hard. You can start out with something so simple like this and just look at how beautful it still turns out! I didn’t even use a plate when I made this. I literally ate it straight out of the skillet and it was unreal.
What will you need?
2 eggs + a dash of milk, salt, pepper
1.5 cups fresh spinach (loosely packed)
2 tbsp grated parmesan cheese
1 tbsp olive oil
Red pepper flakes, onion powder
How do you make it?
In a small skillet, heat our olive oil and throw in the spinach. Season with a little bit of salt, pepper and onion powder and sautee until the spinach is wilted. This will only take a couple of minutes.
In a small bowl, whisk together your 2 eggs with some salt, pepper and a splash of milk.
With the heat on low, pour your egg mixture over the spinach and allow it to start cookig for a bit on the bottom. Using a spatula, stir the eggs gently to get them to cook evenly on all sides.
Turn off the heat and add your grated parmesan cheese and red pepper flakes on top.
Boom! Easy as that!
