Strawberry + Pistachio Yogurt

You’ll never want to buy another fruit-on-the-bottom yogurt once you realize how much better it tastes to create one using fresh chopped fruit.  Not to knock those convenient little snacks… they have their place in society too.

Take the extra 5 minutes to taste the freshly chopped strawberries and ground, spiced pistachios and I’m sure you love it.

Also, make sure to serve it in a cute  bowl :)

These days I use greek yogurt for pretty much everything.  The protein content far exceeds any other type of yogurt and it is so thick and creamy.  Best of all worlds!

What will you need?

1 cup plain or vanilla greek yogurt

6 medium strawberries, finely chopped (save 1 for a garnish!)

1/4 cup unsalted  raw pistachios

1 tsp brown sugar

1/2 tsp cinnamon

How do you make it?

In a small food processor, blend the pistachios with the cinnamon and brown sugar until it becomes a fine, powdery consistency.  Set on the side.

In a small bowl, add the chopped strawberries to the yogurt.   Combine well.

Add the mixture to a cuter bowl (one that is worthy of you eating out of it) and then top with the pistachio mixture.  Garnish with more strawberry!
