Scrambled Egg Breakfast Quesadilla

This is an example of one of my many meal ideas that comes to life out of necessity, spontaneity and lack of time to run to the grocery store.  The other morning, it was definitely one of those”make what you can with what you’ve got in the fridge” moments but I still wanted to make something exquisite for my mom for breakfast.

This woman gave me life, after all.  The least I can do is cook her something delicious and beautiful to start out the day right.

What will you need?

2 eggs, scrambled

1 spelt tortilla

3/4 cup sauteed vegetables (I used mushrooms, zucchini, green onions)

1 small tomato, sliced

1/2 cup shredded cheese

1 tbsp olive oil

Salt, Pepper

Optional: Chili powder, salsa, sour cream

How do you make it?

In a medium skillet, sautee your vegetables in some olive oil for about 5 minutes.  Remove from heat and reserve on the side.

In a separate skillet, scramble your eggs.  Again, remove those from the heat and reserve on the side.

Using the skillet that you cooked your vegetables in, heat some olive oil and place your tortilla to start heating.  Once one side starts to get slightly toasted, flip it over to the other side and add your cheese.  Once the cheese is slightly melted, add the scrambled eggs, vegetables and tomatoes on to one half of the tortilla.

Fold in half and cook both sides of the tortilla, allowing the cheese to melt more and hold the whole thing together.

Remove from heat and cut into three pieces.

Serve it as is or add more toppings to it depending on what sounds best!
